Mexicali Blue is a Southwestern/Californian style restaurant, that serves ultra fresh tacos and burritos. Its philosophy is based on the California healthy way of thinking, fresh and natural ingredients, prepared quickly. A burrito (fish, steak, chicken, pork, bean or portobello) makes a satisfying meal on its own. Stuffed with things like fresh cilantro, fresh lime, caramelized Red Onion, rice, black beans, cheese, spices, pico de gallo, guacamole, and sour cream, it's a meal that tastes great! The tacos, wrapped in grilled blue corn tortillas, are a smaller version of the burritos. The meats and fish are all fresh and grilled right in front of you. Everything is cooked fresh to order.
The sides are an important, and delicious part of the menu. The salsa is made daily with fresh tomatoes, cilantro, lime, red onions and salt and pepper. The guacamole starts with peeling ripe avocados, then adding pico de gallo, lime juice, and salt and pepper. The southwestern potato salad and cole slaw are made in store.
Opened in December of 2003, Mexicali Blue in New Paltz offers delicious, fast, and fresh food you can rely on. The New Paltz location is mostly a Take-Out restaurant, but it has been newly renovated to accommodate a little more seating and decor added to give a more Mexican flavor. Our kitchen has been expanded and updated to allow for more selection in our menu. Future items will be quesadillas, salads and soups.
WE OPENED OUR FULL-SERVICE RESTAURANT in Wappingers Falls in December, 2012. We are excited to be able to offer a more expansive menu of delicious Southwestern and Mexican food, along with wine and beer.
So come in to New Paltz or Wappingers, or both, and try new fresh, delicious reasons to enjkoy Mexicali Blue. We look forward to serving you.
Quote from chef Michael Pardus of the Culinary Institute of America:
"Mexicali Blue in New Paltz, is a truly west coast taco shack. Squeezed into a ridiculously small space with six stools, they serve simple, and sparklingly fresh Mexican style street food."
